Simple Kale Chips

If you like crunchy, salty chips, you will love kale chips! As they dehydrate, they become nice and crunchy, and you won't be able to stop eating them. They are as addictive as potato chips, but loaded with nutrition and very good for you!

Ingredients
- One bunch kale, any kind*
- Olive oil, to coat
- Celtic sea salt, to taste

Directions
- Chop the kale into smaller pieces.
- Coat them well in olive oil, and sprinkle them with salt.
- Set them on a mesh lined dehydrator tray, and dehydrate them overnight until crisp. Store them in a sealed bag in the fridge, as they may get soggy at room temperature.

*Lacinato kale makes chips that look most like the real thing, but curly kale is great too!

Kale chips were the best discovery I made in my transition to raw. They far surpass potato chips in flavor and crunchiness. Plus you get all the benefits of eating something that is truly good for you!

Somehow, I have a bunch of kale leftover from the last order. Totally going to make chips! I'm thinking olive oil/garlic/salt :) Mustard chips would be awesome too!
