Kelp granules are one of the richest sources of iodine in a raw food diet, which is noteworthy considering that iodine can be sometimes hard to come by.

In her book Evie's Kitchen, Shazzie notes: "I use kelp powder every week in one of Evie's meals. It provides iodine and many other minerals. It has a dense flavour, and a quarter of a teaspoon will enhance any savoury dish."

At Sirova, we regularly use kelp granules in recipes such as Ocean's Tuna. Just like with leafy greens, rotating sea vegetables is an important part of any healthy diet.

This kelp powder is simply the sea vegetable Digitata, a variety of kelp that grows prolifically in the subtidal waters of the North Atlantic. Digitata Kelp is also known as 'Fingered Kelp' - as the blades resemble digits radiating from the palm (hence, the Latin name digitata.) Although similar in nutritional content to regular Kelp "Kombu" (L. longicruris,) Digitata Kelp tends to contain higher amounts of iodine, calcium and mannitol - a natural sugar molecule that gives Digitata Kelp a slight sweetness.
